Baking With Natural Egg Substitutes

Have you ever tried baking with egg substitutes? Here are some tips our test kitchen uses for baking our Taro Cakes pancake mix and Lava Cookies mix using natural egg substitutes.
Many people are allergic to soy and eggs and thankfully, there are many options!

I like to use chia and pureed fruits in my recipes for the added fiber and omega-3 that I can “sneak” in.
You could also use applesauce + baking powder or chia as egg replacers. Try the different egg replacements as seen in the banana and pumpkin quick bread recipes. I use chia in the majority of my recipes but feel free to experiment!

TOFU SUBSTITUTES FOR EGG

Yield: One egg equivalency

Ingredients:

  • 4 Tablespoons Soft tofu
  • 1 teaspoon Baking powder

Directions:

Substitute 4 tablespoons pureed soft tofu + 1 teaspoon baking powder for each egg.

Stir together until there are no lumps in the tofu

FLAX SEED SUBSTITUTES FOR EGG

Yield: Equivalency of one egg

Ingredients:

  • 1 Teaspoon Flaxseed (must be fresh) ¼ cup Purified water

Directions:

  1. Grind 1 teaspoon whole flaxseed in a spice grinder.
  2. Mix together 1 teaspoon of flaxseed meal with ¼ cup of purified water for each egg to be replaced.
  3. Store in the refrigerator.

PUREED FRUITS SUBSTITUTES FOR EGG

Directions:

  1. Combine 3 tablespoons of pureed fruit with baking powder for each egg.
  2. Observe the consistency of your recipe

Yield: Equivalency of one egg
Ingredients:

  • 3 Tablespoons Mashed bananas, applesauce, apricots, pears, or prunes 1 teaspoon baking powder as you may need to decrease liquid, increase leavening by 25-50% and increase your baking time.

VINEGAR AND BAKING SODA SUBSTITUTE FOR EGG

Yield: Equivalency of one egg
Ingredients:

  • 1 teaspoon of baking soda 1 tablespoon of vinegar (apple cider vinegar or white distilled vinegar)

Directions:

Mix ingredients together immediately before you start your cake, muffin or pancake recipe.
